Well, not offering a public, up-2-date cvs was one thing many community members and developers complained about. And from my point of view it was a shame too that there was only a heavily outdated package of the entire groupware (0.8.2). One disadvantage of a bleeding-edge cvs is that there is no guarantee at all that the current state is rock solid until this heavy development proceeds. But as somebody mentioned - the sourcecode is also used for learning, understanding and development - so it does not claim to be in a RTM state.
You should also keep in mind that you are currently building the hosting edition of Hyperion which is aimed for integration and not for 1-click-youre-done installation. I think the state of the CVS will become more stable in the future than it now is after the big bugfixing and additional features like a plugin host is integrated. For having a snapshot of what Hyperion is cabable the current state should be suffice.
