Yes it's true. The last release of SME Server 7.4 is based on CentOS 4.7.
This is a very good server which is more easy to configure than Ubuntu server for example.

So, as you tell me, i'll try this howto "Quick installation guide for CentOS 5".

SME Server seems to be based on CentOS, did you check out our installation guide for CentOS yet? It's possible that it also works with SME, any feedback or additions are welcome. If you're expecting differences we could start a installation guide exclusively for SME.
