Changing Default Passwords

I am brand new to Open Xchange. Is there a rudimentary guide for absolute beginners. How do you change the default passwords? I installed based on the following guide:

I finally figured out how to access the WebGUI from another computer, but it seems like someone would have already written some of this basic information down. I see no reference to this in the documentation. It is rather difficult to follow.

Also, is there a way modify the display settings on some of the fields in the GUI, such as Contacts?
